Let me say it again…yogurt. parfait. popsicles.

I love breakfast. But I love breakfast only in two situations. 1. When someone else makes it for me, i.e. brunch, resort, vacation etc. and 2. A Sunday morning cook fest starting with loved ones and bloody marys. But on a Tuesday morning, my first thought of even eating is what I’m going to have for lunch. That is where food prepping comes in handy. And not the food prepping of plain chicken breast and broccoli for 7 straight days but actual preparation of delicious foods for easy grab and go.

Between working on Teluna in the morning, going to work all day, then working on here at night, I don’t have time to wake up and make the type of breakfast I’d enjoy; so breakfast prepping has become my world, and these easy yogurt parfait popsicles have become my new favorite breakfast. They’re healthy and delicious and I find the cold lightly sweetened yogurt and frozen fruit to be a great wake up call. Plus they’re a super easy solution to eating while you drive!

Turns out even when I moved into my own home, I still found a way to eat dessert for breakfast. Do yourself a favor and prep these babies for a week. You’ll never go back to microwaved dishes or breakfast-less mornings again.

Yogurt Parfait Popsicles

 

::ALL YOU NEED::

3 cups plain greek yogurt

1 tbsp honey

1 cup coconut granola

1 cup fresh fruit

Mix yogurt and honey together in a small bowl. Add in fresh fruit. Pour into popsicle molds and top with granola. Place in your freezer overnight and enjoy in the morning!

Tip: run warm water over popsicle mold for easy release.
