Super easy, kid friendly, delicious and with all the food trends in our generation…Whole 30 approved. These Sweet Potato Tots are a great snack for adults and kids alike. They’re filling, and with a mixture of sweet and salty and “cheesy” flavors, they’re sure to please even the pickiest of eaters. They never have to know just how healthy they are! These tots are simply a combination of sweet potato, Organic Nutritional Yeast, and spices then baked to golden perfection giving you a mixture of crunchy outside and smooth and creamy inside.
Not only did I use sweet potatoes because of the delicious flavor but it’s health benefits are worthy of mentioning; rich with vitamins A, D and B6, extremely high in beta carotene, and containing magnesium, potassium, and iron. Why wouldn’t you want to feed your family with one of the healthiest foods nature has to offer? I knew you did. So whip up a batch of these Whole 30 Sweet Potato Tots and let me know what you think!
Ingredients
- 1 cup Organic Nutritional Yeast
- 3 cups sweet potato
- pinch of oregano
- 1/4 tsp crushed red pepper flakes
Instructions
- Preheat oven to 350 degrees.
- Quarter sweet potatoes and bake for 45 minutes or until tender.
- In a large bowl mash potato, add in Nutritional Yeast, salt, pepper, oregano and red pepper flakes. Scoop out mixture by the tablespoon, roll lightly in additional nutritional yeast, and place on a nonstick pan.
- Season with salt and pepper and bake for 10 minutes.
- Roll tots over and bake an additional 10 minutes.
