I was reading through Bon Apetit the other week and came across this delicious looking Three Bean Salad. It was one of those recipes where you can mix and match and create your own combination of ingredients to fit your personal taste. This is when curiosity, flavor pairing, and a little imagination come in handy. The lemon infused red onion and fresh dill make this dish a prefect summer side to any meal. I’m not kidding, once you taste this you’re going to be matching batches to eat weekly. This could be the new “cowboy caviar” in our household. I went for green beans, butter beans, and black eyed peas… what will you try?

1 can butter beans
1 can black-eyed peas
1/2 lb fresh green beans
1/4 cup fresh chopped dill
1/3 cup ev olive oil
1 shallot
1 tbsp grated lemon zest
1/4 cup lemon juice
salt & pepper to taste
In a small bowl combine shallot, lemon zest, and lemon juice. Let sit for 5 minutes to reduce the bite of the shallot. Combine butter beans, black-eyed peas, green beans, dill, and oil in a large bowl. Stir in shallot lemon mixture and season with salt and pepper. Serve chilled and enjoy!
