🥚 make sure you fully combine your egg whites and yolks with a whisk in a bowl before cooking so the consistency is even.
🧂I like to add salt to the whipping stage because salt breaks down the eggs proteins, allowing them to create a ‘moisture binding network’ resulting in more tender eggs. Whisk eggs about 10min prior to cooking.
🍳 cook them LOW and SLOW. This is my most important tip. They should really only cook a few minutes. Otherwise they can dry out quickly and not come out fluffy. If the “a little wet a little dry” freaks you out, then cook until there’s the tiniest bit of shine to your eggs. You don’t have to cook them to death.
🥚 since you’re cooking on low heat, you can just use butter to season your pan. I like to let my butter brown just a little. (This just means cooking it longer, until golden brown, before pouring in your eggs)This removes water in the butter, and caramelizes the butter’s milk solids giving it more of a concentrated buttery richness.
🍳 everyone likes their eggs different. I never liked scrambled eggs until I tried my brothers way of cooking them as an adult. Some like more wet, some more dry, some cooked in oil instead of butter, some people add milk to their whipped eggs…it’s totally up to you!
