Lemon Poppyseed Muffins… These are the muffins of my childhood. Every time I cook them, smell them, hear about them I picture my mom baking in the kitchen and feel the joy of that lemon smell wafting into the entire house. These were always my brothers favorite. Lemon poppy seed muffins or lemon bars made and he’d come running! We all loved these muffins but he really takes the cake on lemon desserts.
My brother was deployed last Wednesday; not a fun day for our family. So as much as I wish I could box these lemon beauties up and ship them (and the smell) to him, I made them instead on his behalf. You really don’t realize how much you talk to someone everyday until you can’t. Let this recipe be a little reminder… call up the ones you love or maybe haven’t talked to in awhile and let food be a way to show someone how much they mean to you. ::WHAT YOU’LL NEED::
CUPCAKES
1 1/3 cups flour
1/2 tsp baking soda
1/2 tsp salt
4 tbsp butter
3/4 cup sugar
2 eggs
1 tsp vanilla extract
zest of 1 lemon
1 tbsp fresh lemon juice
3/4 cup plain greek yogurt
1 tbsp poppyseed
ICING
2 tbsp room temp butter
4 ounces cream cheese
3 cups powdered sugar
2 tsp fresh lemon juice
Preheat oven to 450 and place liners in your large muffin pan.
Mix flour, baking soda, and salt in a medium bowl and set aside.
In a large bowl, or in your mixer with the paddle attachment, mix together butter, sugar, eggs, vanilla, lemon zest and juice, and yogurt.
Add dry ingredients to wet in 3 portions, mix just until combined. Stir in poppyseeds.
Fill muffin liners 2/3 full with batter. Bake for 15-18 minutes or until a toothpick comes out clean.
While the muffins are baking, combine butter and cream cheese until fluffy. Add powdered sugar and lemon juice and mix on high about 2-3 minutes.
When muffins are done, place on cooling rack and allow to sit about 5 minutes. Then drizzle icing over (they should be just warm enough to make the icing melt a little bit). Serve and Enjoy!!
