I LOVE GRANOLA BARS.
I don’t know what it is, maybe the convenience of them? Or that fact that I associate them with not passing out (bringing my sugar level to normal). They’re great!
You know what I don’t like about them? They’re so damn expensive! Someone’s gotta explain this to me. Are they the Willy Wonka bars and one is wrapped in gold foil? I never understood why I had to pay $2.50 for 5 bites of 6 ingredients that I could blend and mush into a mold at home. I was tired of half my grocery bill going towards things I could make myself so you know what I did? I MADE THEM MYSELF! (like you didn’t see that coming). One of my favorite bar companies Larabar has amazing tasting bars. Don’t get me wrong if I was decently rich I would happily buy them in mass bulk but I just don’t have the means…but I do have the ingredients. When I looked in my pantry I realized I had all the ingredients to one of my favorite flavors… The Key Lime Bar. So I opted to make it myself. A little measure testing and a few tries and there they were… an entire dish of Key Lime Larabar. Easy. Simple. Delicious. Give it a try!

::ALL YOU NEED::
1 cup organic shaved coconut
1 cup almonds
1 cup cashews
12 pitted dates
2 tbsp coconut water
1 lime juice
In a blender or food processor, pulse coconut, almonds, and cashews until they’re smaller than rice. In a blender or food processor, pulse dates and coconut water together. About 2 minutes, without pureeing.
Place all ingredients in a bowl, squeeze juice of one lime with a little extra pulp pulled out and mix until combined.
Press mixture into a parchment paper lined 8×8 pan and place in the fridge for an hour. Serve chilled and store in the fridge. Enjoy!!
