“Yucky Yucky Pizza…Yummy Yummy KALE CHIPS!” I repeated this (in my Kate Hudson: How to Lose a Guy in 10 Days) voice the entire time I made these; and they were YUMMY! Kale chips are super easy and a healthier alternative to chips. Not only do they taste great but kale has unmatched nutritional value for fewer calories. A few benefits include:

Holy Healthy I know! So here’s my top four Kale Chip flavors that I make at home.
Ingredients:
2 Very Large Bunches of Kale (see photo above)
12 tbsp (total) olive oil
4 tsps (total) sea salt
1 lemon
1 tbsp honey
2 tsp red pepper flakes
2 tsp black pepper
¼ cup grated cheese
1. Separate your kale and rinse them throughly.
2. Turn kale stem side up and cut downward with a knife. Don’t worry if they are big chunks, you will tear them later. If you want to keep the stems, chop into small pieces and freeze them; they are great for soups.
3. Cut or tear leaves into 2 inch pieces and separate into four even bunches. (You only need two pans at a time, I had the other two out for storage)
Now for the flavoring!
4. Mix each of the following lists together in their own bowls (as seen below)
Cheesy Chips:
2 hand fulls kale (torn into 2 inch pieces)
3 tbsp olive oil
1/4 cup grated cheese
salt and pepper to taste
5. Pour mixture over kale and toss lightly. I like to grate more cheese over the top of this one.
Spicy Pepper Chips:
2 hand fulls kale (torn into 2 inch pieces)
3 tbsp olive oil
1 tsp sea salt
1 tbsp red pepper flakes
This ones a hottie so hold back on some of the red pepper flakes if your not feelin spicy!
Sweet Honey Lemon Chips:
2 hand fulls kale (torn into 2 inch pieces)
3 tbsp olive oil
1 tsp sea salt
1/2 lemon (juiced)
1 tbsp honey
Olive Oil & Sea Salt Chips:
2 hand fulls kale (torn into 2 inch pieces)
3 tbsp olive oil
1 tsp sea salt
2 tsp black pepper
These look exactly the same when you mix them so try and keep track when putting them in the oven. Or make the next kitchen goer taste them and tell you which one is which.
I suggest not baking the red pepper flake chips with the honey chips as the spicy flavor may transfer.

p.s. If you can get your child past the “eww its green!” idea, I guarantee they will love these. My 2-year-old niece ate an entire bowl by herself.
TIP: Select Kale with moist and hard stems with firm, deep green leaves. The smaller leaves are milder in flavor and more tender, if you prefer that. If you see browning or small holes, do not buy that bunch, as it is old and dying. AND This is the perfect time to make these as it is peak Kale season!
