Creating cocktails is one of my favorite creative moments. It’s the joy of creating a recipe and something that tastes delicious but you feel way cooler and you get to drink. =)
I was crafting up a cocktail for St. Patty’s Day (soon to come) and thought it really needed a special touch. I already came up with all green and gold but the Leprechaun’s gotta be after this cocktail for a reason…oh yeah…DIAMONDS. Rather than normal ice cubes, I decided to use my diamond ice cube mold to create my ice out of the mint simple syrup I would already be using. They were gorgeous! Pure white and filled with fresh green mint in stunning diamond shapes.
So here’s the kicker… ice takes a good minute to start melting… simply syrup ice takes about .4 seconds. Trying to take photos was like someone playing a trick on me. I placed down the diamonds, turned around and grabbed my camera, turned back and check out how much they’d already melted!! I definitely plan to make them again, with less sugar and a longer boiling time before cooling and molding. I definitely think they would hold longer and I’ll be sure to update when I give it a try. They may be quick melters but they sure are pretty. These DIY Mint Simple Syrup Diamond Ice Cubes will leave your guests in aww and your cocktails at high class standards.

1 cup water
1/2 cup sugar
2 tbsp chopped fresh mint
Place all ingredients in sauce pan, bring just to a boil, remove from heat and let cool completely before pouring into diamond mold. Let freeze over night.
