When it comes to winter; your probably either looking for a fluffy warm blanket, or a hearty warm soup, either to block this crazy winter season out. We’ll I don’t have a blanket for you but I do have a soup! A Creamy Vegetable Gnocchi Soup. I love this soup because it has the thicker creamy consistency you want for comfort food with the amazing texture and taste from the gnocchi and veggies. Hope this warms the heart and keeps you feeling like you’ve got that huge comforter wrapped around you. Enjoy!

Sprinkle your serving with a little parsley and red pepper flakes for color and kick. Broil a little buttered toast for a side and Enjoy!
Ingredients
- 1 tbsp butter
- 2 tbsp olive oil
- 2 cups sweet onion
- 2 cups red bell pepper – finely chopped
- 1 cup carrots – finely chopped
- 1 cup celery – finely chopped
- 1/2 cup flour
- 3 cups chicken broth
- 1 cup water
- 1 cup whole milk
- 1 cup half&half
- 1/2 tsp ground thyme
- 1 tbsp dried parsley
- 1/2 tsp crushed red peppers
- 2 cups fresh baby spinach
- 2 cups cooked gnocchi
Instructions
- In a large pot over medium heat, melt together butter and extra virgin olive oil. Add in all vegetables except spinach and sauté about 15 minutes or until tender. Mix flour in with cooked veggies to form a thick paste consistency.
- Add broth, water, milk, half & half, thyme, parsley, red pepper flakes, and salt and pepper to taste. Bring a large pot of salted water to a boil and cook gnocchi according to package directions.
- Add spinach to the soup cooking on low for about 4-6 minutes. Stir in gnocchi and serve it while its hot!
