Sunday mornings are for fun breakfasts, and what better to surprise your loved ones than with this Chia Pudding Layered Fruit Smoothie! Layered with fruits and filling chia seeds this smoothie is a great way to fill up and still eat healthy. Plus you can sneak in fruit and spinach to the kiddos disguised as a fun layered smoothie! Whip it up, impress your loved ones, and Enjoy!
::ALL YOU NEED::
CHIA PUDDING
2 tbsp chia seeds
1/4 tsp vanilla extract
1 1/2 cups coconut milk
GREEN LAYER
1/2 banana
1/2 cucumber
1/2 kiwi
handful fresh baby spinach
splash coconut milk
PURPLE LAYER
1/4 cup blackberries
1/4 cup blueberries
1/4 cup strawberries
handful fresh baby spinach
splash water
Combine Chia Seeds, vanilla, and coconut milk together and place in the fridge up to 4 hours. You want the chia seeds to soak up all the milk; they should be squishy and clear and bloated. (You can make this overnight) Combine all ingredients in layer 1 and pour even amounts into 3 glasses as the bottom layer. Spoon chia pudding on top of layer 1 in each glass. Combine all ingredients in layer 2 and pour even amounts onto the chia pudding layer. Top with a dollop of chia pudding and a couple black berries. Serve with a spoon and enjoy!
