Now that I’ve been working from home more than 4 days a week, staying fit and healthy has become harder. sounds crazy right? I know people picture those of us who work from home chillin on the couch with wine sometimes cruising through our emails waiting for office goers to get home and play with us. DEAD WRONG. One of the hardest parts of working from home is keeping an actual schedule. I can’t tell you the number of times I thought “hmm I’m kinda hungry, oh shit, it’s already 2pm and I haven’t eaten anything. I’ll grab something in a minute *looks at clock again* aaand now its 7pm.” There’s no herd of lunchtimes to know you need to go eat or realizing everyone is heading home and it’s time to head out. It’s a schedule that leaves you starting work earlier and not being able to walk away from it into the late nights. With this kind of sporadic and unpredictable schedule, remembering to eat, let alone eat something healthy that actually tastes good can become daunting.
I love food. Like a lot, if you couldn’t guess. So eating a salad and an apple for lunch is not going to satisfy or please me. I want healthy, protein packed, filling and delicious meals that can keep my brain functioning into the late work from home nights that often fill my schedule. In comes my super easy Carrot Noodles with Ginger Curry Sauce. I love this dish because its super tasty, you can use left over chicken and you can make it for one. This meal is healthy, quick, super simple and will forever change your work from home lunchtimes. If you’re already a food prepper (good for you btw), you’ll want to add this to your healthy lunch prep this week. No more take out for you boss!
Ingredients
- 2-3 large raw carrots, peeled and spiralized
- 1/4 cup cilantro
- 1/2 cup shredded chicken
- Ginger Curry Dressing
- Sesame seeds
- Ginger Curry Dressing
- 1/2 cup almond butter
- 2 tbsp coconut milk
- 1 tbsp raw honey
- 1 tbsp toasted sesame oil
- 1tbsp seasoned rice vinegar
- 1/2 lime juiced
- 1/2 tbsp red curry paste
- 1 clove garlic chopped
- 1/2 tbsp ginger powder
Instructions
- Place all dressing ingredients in a food processor and blend until well combined.
- Mix raw carrots, cilantro, and chicken in a bowl and top with ginger curry dressing, cilantro, and sesame seeds. Serve cold or room temperature. Enjoy!
