YALL! This brie prosciutto fig jam grilled cheese is ah👏🏼maze👏🏼ing👏🏼 The buttery crispy crust, the sweet fig jam and the salty prosciutto makes for the perfect combination of salty sweet. This sandwich is pan friend until the cheese is melty and the bread and prosciutto are crispy. It’s a gorgeous fancy twist on the classic grilled cheese. It’s savory, sweet, with a touch of salty, perfect for just about any day of the week.
So why the English muffin instead of bread? Well personally we don’t buy or really eat bread that much. The only bread we typically have in the house is everything bagels for Michael and occasionally English muffins. When I set out to create a grilled cheese recipe I thought I could go to the store and find something or just use what I had. And boy did it work out!
The holes in the English muffin add a airy lightness to this sandwich that you don’t usually find in a grilled cheese. While it’s still very filling, you don’t get that fall asleep too heavy feeling after this one. Also all the holes fill with the melted butter and while the top peaks get crispy the inner holes that don’t touch the pan directly stay buttery and chewy.
If you’re worried about not using ingredients like fig jam or prosciutto again, use these two ingredients on your next charcuterie board then use the left overs to make this sandwich. It will definitely be worth it. This savory and sweet adult grilled cheese is easy and perfect for an easy yet unique week night dinner.

Brie Prosciutto Fig Jam Grilled Cheese
Ingredients
- 1 Thomas English Muffin
- 1 tbsp Kerrygold butter
- 2 tbsp Fig Jam (I personally like Bonne Maman Fig Preserves)
- 2-4 slices prosciutto
- 3 slices brie cheese
Instructions
- Split English muffin in half and butter the inside of both sides.
- Spread fig jam on one half.
- Top with prosciutto then brie cheese and cover with the other half of your enlightened muffin, butter side up.
- Place on a pan on medium low heat until golden brown.
- Flip and sear until golden brown and cheese has melted.
- Enjoy!
