Brie cheese appetizers is one of those recipes I love to serve when company comes over. It’s delicious, it’s comforting and I love that it brings everyone into a circle around the dish to talk and laugh. Great tip: also put the wine next this appetizer, your guests will be crowding here like…well… party goers to wine and cheese. =) Melty, gooey and bubbly Brie Cheese with Dates, Almonds and Sage paired with a great wine will send your guests into luxuriant cheese heaven. You can also make this appetizer early and simply pop it into the oven just before your guests arrive, leaving you more time to relax and visit.
Typically when I make Brie Cheese appetizers, I’ll wrap the block inside croissant dough with lots of sugar and almonds and bake it on a cookie sheet. But I wanted to try something a little different this time and with all the left over sage from the Guinness pizza I made the week before, sweet and savory felt like the perfect fit. Plus I’ll find any excuse to use this adorable Norpro Mini Cast Iron Skillet. (P.s. buy one of these! They are perfect for camping.) The balance between the sweet brie and dates and the earthy and nutty almonds and sage make for a perfect combination. ::ALL YOU NEED::
1 8oz Brie Cheese
1/4 cup sliced almonds
6 dates
5-6 fresh sage leaves
Preheat oven to 350 degrees. Trim your cheese block by running a sharp knife around the edge, leaving the top and bottom white coating in tact.
Remove the seeds and chop your dates into small pieces.
Roll your sage leaves like a small cigar and thinly slice creating thin strips.
Place cheese in the center of your skillet and top with dates, almonds and half the sage. Bake for 15-20 minutes or until cheese is melted and bubbly. The top white center will be shrunken and sunk into the middle.
Remove and sprinkle remaining sage on top. Sage that is baked will turn a dark grey, adding some after cooking adds a bright splash of green and flavor.
Serve immediately with bread or crackers. Enjoy!
