Its 8pm, dinner has been made and enjoyed and all I can think about is what I can easily snack on tomorrow. I’m only 5 days back into healthy eating and workouts and my mind flips into crazy health nut mode faster than a 5Guys burger. (That’s fast) Maybe because I’ve done it before? Honestly, I haven’t the slightest idea, but I get so concerned that the bagel and cream cheese screaming my name will conquer my hunger and ruin the new health mindset that I now stay up to make snacks for the following days. It’s like recruiting an army of fruit and vegetables against the tempterous carbs and sweets militia. It’s a tough battle.
In an effort to not let the bagels win, I’ve made these super delicious Blueberry Coconut Protein Balls with lemon to snack on during the day. Start your New Year off right with this easy and healthy snack. With just nuts, seeds, blueberry, and coconut as the base, they’re filling, healthy and honestly taste like balls of candied blueberry muffins. Delicious.
Seriously, how delicious does that lemon and coconut coating look!?

Blueberry Coconut Protein Balls
Ingredients
- 1 1/2 cups cashews
- 1 tbsp flax seed
- 1/2 cup dried blueberries
- 4 medjool dates
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 1/2 tsp vanilla extract
- 1 pinch sea salt
Instructions
- Blend together cashews, flax seed, and coconut flakes to create a course combination and pour into a bowl.
- Blend blueberries, dates, lemon juice, lemon zest, vanilla, and sea salt. This will create a pretty wet mixture. Use a spatula to pour into bowl with dry mixture and mix until combined. Mixture should easily hold together when pinched.
- Refrigerate for 20 minutes to make dough cold and slightly hardened. Roll into 1 inch balls then roll in left over lemon zest and coconut flakes.
- Store in the fridge in an airtight tupperware. Enjoy!
