Sometimes when you’re sitting at a desk all day you really need to get up and take a little break. I’ve been working 14 hours days these past two weeks between taking on freelance clients, keeping up with this here blog, planning our trip to San Francisco, and designing our new line for Teluna. I usually don’t even realize about 6 hours will have passed and I haven’t eaten anything or taken a break. It’s not until I go to do my daily workout that I realize I’m starving. I’m really trying to work on creating better work habits, especially because working from home can quickly consume your entire existence. Really really looking forward to our trip to San Francisco for a little breather from the home office and staring at a computer all day. Sometimes a girl just needs a break! And this quick and delicious salad was my favorite short break this week.
Cooking has always calmed and focused me and making a quick and healthy salad was the perfect work break. Not too long, filling, and refreshing. I love this Arugula, Mango, Avocado salad because it’s so bright and colorful and bursting with so many flavors. The peppery arugula, red onion, and red pepper flakes are perfectly balanced with the creamy avocado and sweet mango. So yummy! I think it’s really important not to eat heavy meals like pasta, creamy things, and breads during the day if you’re sitting at a desk. It’s like a carb filled flubber sitting heavy on your insides waiting to create cellulite as you sit there. Heavy meals leave you tired and sluggish while meals like this salad will give you a refreshed energy boost perfect for finishing up the second half of your day. After building this beauty there was nothing left to do but surrender into my little piece of salad sunshine for the day. Now stop reading this and go make one!
::ALL YOU NEED::
1 handful arugula
1/4 cup chopped mango
1/4 cup chopped avocado
1 tbsp cilantro
1 pinch crushed red pepper flakes
2 tbsp chopped red onion
1 tbsp olive oil
Finely chop your red onion and place in a small dish with 1 Tbsp lemon juice and set aside. Chop your mango and avocado into small chunks. Finely chop the cilantro. Create your salad! Place arugula in a bowl, top with mango, lemon fused red onion, avocado, cilantro, and red pepper flakes. Pour on the other 1 Tbsp lemon juice and olive oil and salt and pepper to taste. Enjoy!
