Homemade Apple Pie Ice Cream

For each person in our family, we’ve always let the birthday boy/girl choose their birthday dinner and everyone else would make it. A tradition I’ve always loved and cherished. One year I chose 3 of my favorite recipes: dumplings, mashed potatoes, and mac and cheese… needless to say everyone could barely walk that night. Or function the next morning. Carb hangover is a thing right?

So this year, for Papa Bear’s Birthday, he decided to go fancy. We made him a delicious Lamb Ragu and for dessert, a restaurant worthy Homemade Apple Pie Ice Cream. There was so much flavor in one night my mind and mouth couldn’t keep up with all the deliciousness! It was one of those meals where you loosen the jeans and keep forcing just one (or five) more bites just to taste the dishes again. With such a unique flavor packed dinner, the comforting apple pie ice cream was a perfect ending to the night.

While it definitely took a good amount of work and time, this dessert is so worth it. Every cinnamon-y apple loaded bite is like a feeling of every family and friends loving holiday dessert rolled into one. The french vanilla base is so creamy and soft, mix in the spiced baked apples and crunch of graham crackers and yes… yes it is drool worthy.

Nothing says summer like fresh homemade ice cream with fresh fruit. Apple pie may seem like a fall dessert but crank this baby out this summer and you’ll be making it all year. Don’t blame me when you can never go back to store bought ice cream again.

Okay ya got me, I am eating a giant bowl of this ice cream as we speak. Now go make you’re own, I’m not sharing.

::ALL YOU NEED::

FRENCH VANILLA ICE CREAM

2 1/2 cups half and half

2 egg yolks

1 cup sugar

2 1/2 cups whipping cream

4 tsps vanilla extract

1/8 tsp salt

SPICED APPLES

2 green apples

1/2 cup brown sugar

1 tsp lemon juice

1 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp all spice

1 tsp coconut oil

For the apples: Preheat oven to 350 degrees. Peel, core, and chop apples. Grease pan with coconut oil. Toss apples in sugar, lemon juice, cinnamon, nutmeg, and allspice. Bake for 30 minutes then strain apples into an airtight container and place in the fridge. You can make the spiced apples up to a day before.

For the ice cream: In a medium saucepan over medium heat, heat half and half until very hot but not boiling. Remove from heat. Place egg yolks and sugar in KitchenAid mixer and whisk on speed 2 for 30 seconds. Gradually add half and half until well combined. Return mixture to saucepan and cook on medium heat until small bubbles form. Do NOT boil. Transfer to a large bowl and mix in whipping cream, vanilla, and salt. Chill for 8 hours.

Pour cream mixture into ice cream maker and churn up to 45 minutes. Half way through, mix in apples. Just before stopping, mix in crushed graham cracker crumbs. Scoop into a container and keep in the freezer for at least 6 hours before serving. Enjoy!
