If you live in the DC, MD, VA area you are well aware that it has rained for 22 days straight! It was horrible and miserable and killed half my plants. While indoors I kept thinking of bright and colorful recipes to make, just to bring some Summer into the days. I figured what is more summery than a fun sugary citrus recipe? Especially one you can use for cocktails! I wanted something unique for summer cocktails and decided on creating this Candied Kumquat and Kumquat Simple Syrup recipe. As of yesterday the sunshine has finally decided to grace us with her warmth again and although the rain is gone, this sugary deliciousness remains.
I love making flavored simple syrups myself mainly because they’re so easy to make (3 ingredients easy), so there’s really no need to go out and buy expensive ones. Plus you can make them as subtle or as strong as you’d like. I like to make mine very flavorful, go big or go home right.
Simple syrups are perfect for adding to cocktails, cake icings, flavoring tonic water, ice cream topper, loaf cake soaker and more. Keep an eye out for my Candied Kumquat and Lime Loaf Cake recipe, which uses both the syrup and the candied slices! Have a wonderful Memorial Day weekend!

::INGREDIENTS::
1 cup sugar
2 cups water
10-15 fresh Kumquats sliced and de-seeded
::HOW TO::
Bring water and sugar just to a boil in a small sauce pan.
Reduce to medium low and simmer for 4 minutes.
Add in kumquat slices and simmer another 5-6 minutes.
Remove from heat and let cool completely.
Keep in the fridge in a well sealed jar.
