My favorite dinner nights are the ones you kind of make up dinner with what you have in the fridge. So the other night I made pasta with homemade pesto, chopped fresh tomato, and fresh sautéed mushrooms and it was a huge hit. Totaling just 8 ingredients this recipe was super easy to make and I didn’t have to go out and buy expensive Pine nuts which is always a plus. I hope you enjoy it!

Look at that gorgeous green pesto color. I love making homemade pesto, it makes a huge difference in the overall taste, and its such a beautiful color.
Ingredients
- 2/3 cup Olive Oil (plus 1 Tbsp for sautéing)
- 1 cup Basil
- 1 1/2 clove Chopped Garlic
- 1/16 Sunflower Seeds (un-salted)
- 1/16 cup Slivered Almonds
- 5 Large White Mushrooms
- 4 cups Tri Colored Fusilli Pasta
- 1 Large Tomato
Instructions
- Bring a large pot of water to a boil so it's ready to throw in pasta after you make the pesto.
- Blend basil, half the olive oil, and garlic until blended.
- Slowly add in sunflower seeds, remaining olive oil and slivered almonds while continuing to blend. Salt and pepper to taste then set pesto aside.
- Place pasta in boiling water and begin sautéing sliced mushrooms in olive oil.
- Boil pasta only about 8 minutes then rinse pasta in cold water to prevent further cooking and keep it al dente.
- Mix pasta, pesto, mushrooms, and diced tomatoes together and Enjoy!
