Beet Carrot Apple Ginger Juice
I read a book the other day that talked about how you lose a lot of fiber when juicing. And I know what some of you are thinking… Diana, just eat the damn fruit right? We’ll ya know what? Some days I don’t feel like eating a beetroot, a carrot, an apple, and ginger root for breakfast and on those days…I JUICE. Plus its delicious and vitamin packed juices are much easier to walk around with than a plate full of food. I plan to remake this recipe tomorrow morning before heading out for a kayak in Georgetown. Have a juicy day! (Yeah I went there.)

::ALL YOU NEED::
2 lg beetroot
8 lg carrots
1 lg green apple
2 tbsp ginger root
3 cups coconut water
Bake beets at 400 degrees for 45minutes or until tender. (Peel skin off before blending)
Place all ingredients in blender and blend until smooth and frothy.
Push blended ingredients through a strainer into a large bowl or glass and chill up to 30 minutes. Drink immediately and enjoy!!
