You gotta mix in the easy reliable weeknight dinners with the gourmet Pinterest wins. Ideal weeknight dinners should be quick, easy and resonably healthy. Introducing my one pan chicken sausage with peaches and red onion.
With just five ingredients and 20 minutes of your time you could be enjoying a mouth watering recipe that tastes like it took you all day to make. This one pan chicken sausage with peaches recipe became a bi-weekly vetted recipe in our house this summer. It’s so simple and inexpensive without skimping on flavor. Really what could be better than pre-cooked no-fuss chicken sausage and one dish!?
I particularly like the Al Fresco dinner sausages. They’re an easy staple to keep on hand and there are so many flavors to choose from. Each sausage flavor is perfectly spiced and seasoned, you’ll hardly have to do any work for your meal. I chose the smoked andouille chicken sausage. The ingredients included smoked paprika, red chili pepper, red bell peppers, garlic, and a few more spices. I chose this flavor because I knew the spice and smokiness from the Spanish seasonings would pair well with the earthy notes of the thyme and sweetness of the peaches. Simply cut up an Al Fresco chicken sausage, zhuzh it up a bit with a few veggies and other ingredients and call it a night!
For this recipe, you’ll want to make sure your red onions are fresh and your peaches are ripe. Remember when you’re grabbing peaches, don’t squeeze them, smell them to pick the sweetest ones. Simply dice up your ingredients, toss them all in the olive oil/season mix, and throw it in the oven. When you start to hear that delightful sizzle you know they’re ready to be devoured. I’m telling you, the way the sugar from the peaches drips out and caramelizes the edges of the sausage is absolute heaven. Easy, sweet and savory heaven.

One Pan Chicken Sausage with peaches and red onion
Ingredients
- 1 package Al Fresco chicken sausage – Smokey Andouille
- 1 large red onion, cut into chunks
- 3 ripe peaches, cut into 8 slices each
- 6 thyme sprigs
- 1/4 cup olive oil
- 2 medium garlic cloves, coarsely chopped
- 1 tbsp lemon juice
- 1 1/2 teaspoon kosher salt
- 1 teaspoon black pepper
Instructions
- Preheat oven to 425°F.
- Cut chicken sausage into rough chunks
- Toss together onions, peaches, thyme, olive oil, garlic, and lemon juice in a large bowl; season with salt and pepper.
- Scatter mixture on your baking sheet.
- Roast in preheated oven until peaches and onions have slightly crisp edges and juice is running. About 25 minutes.
- Serve immediately. Enjoy!
